Healthy Fried Chicken
1 pound boneless, skinless chicken breasts
½ cup fat-free yogurt
½ cup whole wheat flour
1 teaspoon garlic powder
1 teaspoon paprika
1/8 teaspoon salt
3/4 teaspoon black pepper
2 Tablespoons Canola
Trim and pound chicken breasts to less than ½” thick. Spread yogurt on a plate. Combine remaining ingredients and spread on a separate plate. Heat frying pan, on high, to very hot; but not smoking. Add oil. Take each piece of chicken and coat it first in the yogurt and then in the breading; then place it in the hot oil. Sauté chicken approximately 3 minutes (checking the bottom for burning – this cooks very quickly), then turn over and brown to your liking on high; then turn stove down to medium and cook a few additional minutes until chicken in cooked through.
